($125) Ruby-red. Very ripe aromas of blueberry, plum and cherry compote complicated by tobacco, cedar and molasses. Oily in texture but the dark berry flavors are enlivened by zesty acidity, which adds a bracing quality. Mineral notes emerge on the long, spicy finish. WA: The 2005 Shiraz “Emily’s Paddock” offers greater aromatic complexity, more structure, and gobs of supple, ripe, sweet fruit. Give it 5-7 years to blossom and drink it through 2025. Jasper Hill is one of the top guns in Heathcote. The winery practices organic viticulture, dry farming, and has recently entered into a joint venture with Michel Chapoutier to develop a vineyard adjacent to the existing property.
